Meatless dinner

So last night I made my Baked Eggs...I was right. I loved it and Nick, well...didn't hate it, but it's not one of his favorites.

I'm posting the recipes in case you want to try it or are just curious as to what it is.

Baked Eggs Italian Style:
Ingredients:
4 cups marinara sauce (store bought)
8 eggs
Fresh Basil, chopped (not dried)
1/2 cup Parmesan cheese
1/2 tsp Red Pepper Flakes

Directions:
1) Preheat oven to 350*
2) Pour marinara sauce into a 13 x 9 glass baking dish and spread some basil on top of sauce.
3) Make 8 indentions into the sauce, and slip an egg into each one, being careful not to break the yolk.
4) Spread the cheese on top of the eggs, and sprinkle the Red Pepper Flakes on top of the cheese
5) Bake for 18-20 minutes, or until the whites are set and the yolks are still *slightly* runny.

Each egg with 1/3 cup of sauce is 5 points.

Pepperoni Potato Skins:
Ingredients:
2 large baked potatoes, already baked and cooled
1/3 cup pizza sauce
chopped pepperoni
Reduced Fat Cheddar Cheese

Directions:
1) Preheat Oven to 425*
2) Cut the potatoes into quarters and remove 1/2 to 2/3 of the potato. Keep the skins in a curled shape if possible. Place skins on a cookie sheet.
3) Spread the pizza sauce evenly on each skin.
4) Put pepperoni on the sauce (We left some without pepperoni since yesterday was a no meat day and I'm following the rules)
5) Cover with a little cheese.
6) Bake at 425* for 6-8 minutes, or until cheese is melted and skins are slightly hard.

Two skins equals one serving and each serving is 4 points.

Nick liked the skins a lot, and ate the egg, but wasn't a huge fan. He actually went to St. Louis Bread Company while I was at mass!

Tonight is Bacon Swiss Quiche and Au Gratin Potatoes. Yum!
